Delicious Pav Bhaji Ingredients:
1) Carrots- 1/2 cup chopped
2) Frozen peas- 1/2 cup
3) Capsicum Green- 1/2 cup chopped
4) Cauliflower-1/2 cup grated
5) Zucchini-1/2 cup chopped
6) Tomatoes-1/2 cup chopped
7) Salt- 1 tspn ( as per taste)
8) Red chilly powder-1 tsp
9) Degi mirch powder- 1 tsp
10) Red chilies paste -1 tsp ( optional)
11) Lemon – some small pcs
12) Green chilies- 3/4 chopped
13) Pav bhaji masala powder- 3 to 4 big spoon
14) Lemon juice- 1 tsp
15) Unsalted butter-6 cubes
16) Water- 2 cups
17) Onion- 2 medium chopped
18) Potatoes-4 big , boiled and mashed
19) Coriander leaves- freshly chopped
20) Pav buns- white or whole wheat
Preparation Method:
First we will steam all vegetables
1) Used stainer for steaming ( you can steam in a steamer also)
2) On a pre- heat gas stove, please boil some water in a pot ( put some salt in the pot) and put stainer on the pot and cover stainer and steam vegetables for 10 minutes
3) Transfer vegetables into a container
4) Pre- heat another pan ( or kadai) and flame on medium— put 2 cubes butter and one cup chopped onion and sauté for 5 minutes , then add tomatoes and salt, mix well and sauté for 5 minutes
5) Add all steamed vegetables, red chilies powder, green chilies, degi mirch, chili paste and one and a half big spoon of pav bhaji masala – mix well
6) Cook for 2 minutes, put one cup water and potatoes- mix well .
7) Add 2 cubes butter and rest of pav bhaji masala and rest of water- mix well , cover with a lid and let bhaji cook for 10 minutes ( stir occasionally)
8) Now, mash all the vegetables with a masher for 3-5 minutes, add lemon juice and coriander leaves- mix well
9) Put rest of butter cubes, mix well and dish out .
10) To toast pav bhaji buns: On a pre heated pan , put some butter on both sides of pav ( cut them into two pcs horizontally ) and when they are light brown both sides , they are ready.
