Ingredients for Grated Cauliflower ( with peas) or cauliflower rice or keema cauliflower
1) grated cauliflower-500 gm ( cut big florets of cauliflower, wash and then soak them with paper towel .
2) Frozen peas- 1/2 cup ( washed in warm water) also you can use fresh peas
3) cooking oil- 1 big spoon
4) Ghee ( or unsalted butter) – 1 big spoon
5) ginger chopped- small amount
6) cinnamon stick- 1
7) red whole chilly- 1
8) green chilies chopped- 3
9) green chilies slit – 2
10) salt – 1 small spoon ( as per your taste)
11) Turmeric powder- 1 small spoon
12) Red chilies powder- 1/2 small spoon ( per taste)
13) Fresh chopped coriander leaves
14) Garam masala powder- 1 small spoon
15) water – if needed to sprinkle
Preparation Method:
1) Pre – heat pan and put flame on medium to high – put cooking oil , ghee ( or unsalted butter) – wait till oil is heated
2) Add whole red chilly , green chilies and ginger- mix well for a minute
3) change flame to medium to low – add peas and salt – sauté for 3 minutes
4) add grated cauliflower, red chilies powder, turmeric and coriander powder- mix well and cook for 5 minutes with lid closed – stir in between
5) after 5 minutes- change flame to LOW – add some fresh chopped coriander leaves- mix well and with covered lid cook for 10 minutes ( stir in between) – if you feel that at any point cauliflower is sticking to the pan then sprinkle little water.
6) after 10 minutes add garam masala powder and let it cook for 2 minutes with lid covered
7) mix well and the grated cauliflower is ready to dish out and garnish with whole green chilies and coriander leaves.
8) this dish can be eaten with parantha , roti or naan.
