Palak Paneer ( Spinach indian cheese )
Ingredients:
1) Spinach ( palak)-200 gm – stems taken out and washed thoroughly with water
2) Indian cheese ( paneer) – 150 gm , cut into medium cubes
3) 2 medium tomatoes- finely chopped
4) 1 medium onion- finely chopped
5) Fresh lemon ( nimbu)juice- 1 tsp
6) Ginger ( adrak)- small quantity- chopped
7) 2 Green chilies -chopped
8) Cumin ( jeera)seeds-1 tsp
9) Turmeric ( haldi)- 1/4 tsp
10) cinnamon- 1 stick
11) Salt- 1 tsp – as per taste
12) Red chilies powder- 1/2 tsp
13) Sugar – 1/4 tsp
14) Cooking oil- 2 Tbsp.
15) Ice water in a bowl – to dip blanched spinach – to retain original color of spinach

Preparation:
(A) Step one : To BLANCH the Spinach
1) Take 2 liter’s of water in a pot and boil , then put washed spinach for 2 minutes in boiling water- take out and right away dip in ice water for 1 minute- take out in a bowl
2) add ginger and green chilies and blend in a blender to make a fine paste, take out in a bowl

(B) Tadka :
1) In a pre – heated pan put oil , once oil heated add cinnamon stick and cumin seeds
2) change flame to medium- once seeds splatter- add onions and sauté till onion turn light golden brown
3) Add tomatoes and salt – sauté for 2 minutes
4) Add red chilies powder and turmeric , mix and then add the spinach paste – mix well
5) Add lemon juice and sugar , mix well and cook for 2 minutes
6) Add cream , mix well – then add Indian cheese ( paneer)- stir slowly so that the cheese pieces do not break
7) cook for a minute , dish out and garnish with cream
8) Delicious and yummy palak paneer , ready to eat with Roti , parantha or naan
