Tasty Vegetable Noodles / Chowmein :
Ingredients:
1) Noodles- 200 gm
2) Water – 2 1/2 liter
3) Onion – 1 medium – cut long and thin pcs
4) Peppers : Red , Yellow, green and Orange ( small quantity) , cut into Julienne
5) Broccoli, cabbage, carrots, spring onions ( in small quantity) – cut into pcs and 2 green chilies chopped
6) oil – one teaspoon when boiling noodles
7) oil – 2 tablespoon for stir fry noodles
8) Soya sauce : One tablespoon
9) Chilies sauce : 2 teaspoon
10) Ketchup- 2 teaspoon
11) Salt – one teaspoon- as per your taste
12) Ginger/ garlic paste- 1 teaspoon
13) Red chilies flakes: 1 teaspoon
14) White vinegar: 2 teaspoon
Method:
1) Put a pot on stove , add water ( flame at high) till water come to boil
2) Add noodles, oil and some salt , mix and cover the lid. Let the noodles cook for 5-7 minutes ( 70 – 80 percent cook )
3) once 70 -80 percent cooked , off flame and strain the noodles- pour cold water on noodles and let them cool on a wide plate.
4) Also , before we start to cook/ stir fry the noodles , add all the three sauce and mix well ( soya , chilly and ketchup), keep in a bowl
5) Pre – heat a pan ( kadai ) , add oil ( 2 tablespoon), once heated , add onions and fry for 1-2 minutes, then add broccoli, cabbage and carrots- stir fry for 1-2 minutes
6) Add ginger/ garlic paste and all the 4 peppers- stir fry for 2 minutes.
7) add green chilies and spring onion- stir fry 1-2 minutes
8) Add half of noodles in the pan , mix well with all the vegetables and add half of the 3 sauce mix , then mix well , add little salt- mix well 2-3 minutes till all ingredients mix.
9) Add rest of noodles and sauce – mix well nicely
10) add vinegar and chilly flakes – mix really well and the tasty vegetables noodles/ chow – mein are Ready for plating and eating.
