Matra (Yellow Peas) Street Food

Ingredients:
1) Matara( yellow peas) —11/2 cup – Soak overnight in water or for 5-6 hours in boiling water.
2) Baking soda ( if not soaked overnight- optional) – 1/6 tsp
3) Salt( per taste) – 1/2 tsp
4) Water – 3 cups
5) Onion finely chopped – 3 big
6) Tomatoes finely chopped – 3 big
7) Ginger finely chopped – 60gm
8) 20- Green chilies finely chopped – as per taste
9) Black salt – 2 tsp
10) Fresh lime freshly juiced – 10
11) Imli sweet chatni ( if you don’t have you can make with imli paste, water and sugar)
12) Matara Masala (home made or from a store) – 3 tbsp

To boil Matara or yellow peas
1) On a medium flame in a pressure cooker (PC) , put matara or yellow peas, salt, baking soda and water- cover with PC lid and off the gas stove after 4 whistle in PC.
2) Once steam released from PC, dish out matra or yellow peas in a serving dish- mix well.
3) Now add all the remaining ingredients , mix well (except green Chutny and imli Chutny)
4) Please keep some portions of all of the remaining ingredients ,if some members want to add more( personal choice and taste, including matara masala), at the time of eating
5) Street food ’Matara’ is ready
6) While serving in a bowl put ready matra or yellow peas and green chutny and imli chutny as per taste and extra remaining ingredients if any one wants Dish is ready to serve with kulcha
7) Best to eat with kulcha but can also eat with naan.

Ingredients :
1) 8-10 whole Red dry chilies
2) 6 tbsp Coriander seeds
3) 1 tbsp Black pepper seeds
4) 4 tbsp Cumin seeds ( black or white)
5) 4 tbs Salt
6) 5 tbsp Black salt
7) 2 tbsp Mango powder ( Amchur powder)
8) 1 tbsp Asafetida ( hing)
9) 2 tbsp Dry ginger powder
10)1 tbsp finely grounded pomegranate ( anardana) powder
11) 1 and a half teaspoon Lemon salt (Tatri )
12) 1 tbsp Mint leaves powder
Method:
1) Pre -heat the pan and roast ( for 2 minutes) on medium heat items 1,2,3,4,( from list above), stir continuously.
2) When roasted ( take out from pan) , let it cool and then grind to a very fine powder and mix with rest of items at 5,6,7,8,9, 10 ,11,12( listed above).
The matra masala is ready. Put in a jar.
