Quinoa Pulao and Vegetables salad :
Ingredients:
(A) Quinoa Pulao ( vegetarian)
1) Quinoa-1 cup- 240 gm – washed thoroughly
2) Salt- 1/2 tsp – as per taste
3) Water -2 cups
4) Capsicum – Yellow, red , green – in small quantity-chopped
5) Zucchini, carrots- small quantity-chopped
6) broccoli, cauliflower-2 florets- chopped
7) Spring onion – 1 stalk only- chopped
8) Olive oil- 2 tsp
9) Green chilies- 2 chopped ( optional)
10) Fresh Coriander leaves- chopped
(B) Vegetables Salad :
1) Cherry tomatoes- 10 to 12 – cut into 2 pcs each
2) Avocado- 1 cut into pcs
3) Red Radish- 3 to 4 pcs- Cut into pcs
4) Cucumber- chopped
5) Fresh mint leaves- 6 to 7- chopped
6) Lemon juice – 2 tsp
7) Chat masala- 1/2 tsp( optional)
Preparation For Quinoa Pulao :
1) Boil 2 cups of water in a pot and add Quinoa
2)Change flame to medium and add salt , mix , cover pot with lid and cook for 10 to 12 ( as per quality of Quinoa ) minutes- stir occasionally
3) After 10 minutes, Quinoa is ready , when water is fully absorbed .
4) When you mix quinoa with the help of a fork or spoon , it shows that quinoa is fluffy , and transfer into a bowl
To Sauté vegetables:
1) Pre- heat a pan , add oil .
2) Change flame to medium and add all vegetables and green chilies ( green chilies are optional)- stir occasionally – sauté for 3 to 4 minutes
3) Add coriander leaves and then transfer the vegetables into a bowl
4) Add sautéed vegetables to Quinoa, mix well and wow Healthy, Colorful Quinoa pulao is ready
B) Vegetable Salad:
1) Add all the salad vegetables in a bowl, add lemon juice and chat masala , mix well
2) Healthy and multi coloured Salad is ready to eat with Pulao.
