Ingredients:
A) For preparing Roasted masala powder
1) Whole dry red chilies ????- 2
2) Small green ilaychi( cardamom) – 2
3) Jeera ( cumin) seeds – 1 teaspoon
4) whole dry coriander- 2 tablespoon
5) Small cinnamon stick- 2 .

Put these on a heated pan , roast 1 minute and when masala cools down , grind them coarse.
B) other Ingredients:
6) Big onion – one – diced
7) Green and red diced bell peppers( Capsicum or Green and red shimla mirch)- diced , without seeds) – 1 cup
8) medium tomatoes and green chilies- 2 each – purée
9) Paneer ( Indian cheese)— 250 gm , cut into small cubes
10) Medium onion- 1, finely chopped
11) Tomato- 1 big- finely chopped
12) Ginger/ garlic paste- 1 teaspoon
13) Salt – 1 teaspoon
14) Haldi ( turmeric)- 1/4 teaspoon

Preparation method:
1) Pre- heat oil in a kadai ( pan ) – flame on high to medium) , add red and green peppers, for 2 -3 minutes
2) Add diced onions- sauté 1 minute . Take out peppers ( capsicum or Shimla mirch)and onions in a plate/ bowl
3) Now in remaining oil sauté paneer cubes for 1 minute- take paneer out in a plate
4) In the remaining oil add butter ( flame on low ), add 1/2 of coarse roasted masala , roast in oil for 30 -40 seconds , add finely chopped onion, ginger/ garlic paste- sauté 1-2 minutes
5) add chopped tomatoes and salt- sauté 1 minute
6) add tomato purée and all dry masalas ( except kasoori methi and cream ) .
7) cook masala 5-7 minutes ( flame on low) , till oil oozes out , add water , cook with lid covered – change flame to low to medium so that gravy comes to a boil .
8) now gravy is ready , add sautéed peppers and onions, then add paneer and rest of roasted masalas , mix well slowly.
9) add kasoori methi and cream mix on high flame for a minute and dish out.
10) Voila ! Restaurant style kadai paneer is ready
11) Optional : if you want more gravy , add more water at step number 7) .
12) kadai paneer can be eaten with Naan, roti or parantha.
