Vegetable Pulao ( In pressure cooker), Quick, tasty and easy :
Ingredients:
1) Basmati Rice – 1 glass ( 230 gms) – washed well , soaked in water for 20 minutes and then drained
2) Mixed Vegetable: 11/2 cup – sliced potatoes, cauliflower pieces , peas and small pieces of carrots or add the vegetables of your choice
3) Onion – 1 big , sliced
4)Green cardamom- 2
5) Cloves – 5-6
6) Tejpatta ( bay leaves) – 1/2
7) Cumin seeds – jeera- 1 teaspoon
8) Black cardamom- 1
9) Red whole chilies- 2
10) Cinnamon stick – 1 inch
11) Ghee- 2 tablespoon
( one can use any cooking oil)
12) Green chilies- 3, slit
13) Salt- 1 teaspoon ( as per your taste)
14) Red chilies powder- 1/2 tablespoon
15) Garam masala powder-1/2 teaspoon
16) Mint leaves – 10 , chopped
17) Lemon juice- 1 teaspoon
18) Water – 11/2 glass
( Ratio of Rice to water — 1 to 11/2 times )
Preparation:
1) Pre- heat pressure cooker then change flame to medium, add ghee – once heated add jeera – wait till it crackle
2) Add tejpatta , cloves , ilaychi small and big and cinnamon stick
3) Add onion- let it change color to brown- takes 2-3 minutes
4) add vegetables – sauté 3-4 minutes
5) now add green chilies, salt , red chilies powder, mint leaves, lemon juice and garam masala powder- mix well
6) add rice – mix well and add some water – mix well
7) add rest of water- mix well slowly and put the pressure cooker lid
8) now we will wait for 2 whistles in pressure cooker- then off the stove and then put the pc aside
9) will wait till all the steam from pc is released on its own
10) now the steam is released and open the lid of pressure cooker and dish out Pulao
11) one can enjoy vegetable Pulao with Dahi , raita and add aachar and papad on the side.
