Dhaba Style – Urad dhuli dal with sparkling tadka
( in pressure cooker)

Ingredients:
(A) To boil dal :
1) Urad dhuli dal – 1 cup ( 130 gm)
2) Salt – 1 teaspoon- as per your taste
3) Haldi – 1 teaspoon
4) water- 2 cups
Note: ratio of dal to water — 1 : 2
(B) For Tadka :
1) Onion – 1 small , chopped
2) Tomato- 1 medium, chopped ( seeds taken out)
3) jeera – 1 teaspoon
4) Dry whole red chilies- 2
5) Ghee – 2 tablespoon
( use any cooking oil)
6) Adrak – 1 inch- chopped
7) Hing – 1/8 tablespoon
8) degi mirch- 1 teaspoon
9) red chilies powder- 1/2 teaspoon
10) green chilies- 2- chopped
11) Fresh coriander leaves- chopped
12) Lemon pcs – 2 or 3

Preparation Method :
(A) To boil dal
1) wash dal in water 3-4 times and then soak for 30 minutes, wash again and drain the water
2) put pressure cooker on a medium flame and put water in pressure cooker (pc)
3) add dal , haldi and salt – mix well and put the pc lid
4) after 4 whistles- off the stove and place pc away till steam goes out completely.
5) now the steam is out completely , open the lid and dish out in a bowl/ plate
(B) Tadka :
1) put flame on low to medium in a pan , add ghee – once ghee is heated add whole red chilies and jeera
2) Add onion, adrak and hing – let the onion be brown ( sauté 1-2 minutes) , then add tomatoes ( sauté 1-2 minutes)
3) add Degi mirch , chopped green chilies and red chilies powder- sauté 1-2 minutes
Tadka is ready
4) pour tadka on dal and add / garnish with coriander leaves and lemon
5) one can eat this tadka dal with roti and parantha

Optional: while eating, one can squeeze a few drops if lemon juice on the dal .
