Ingredients for Masala Rajma:
1) 1.5 cups light Red kidney beans (Rajma)- washed several times in fresh water and soaked in water overnight
2) 2 medium onion very finally chopped
3) 3 tsp cooking oil
4) 3/4 cup tomato purée
5) 1.5 tsp ginger/ garlic paste
6) 2 green chilies finally chopped
7) Fresh , chopped coriander leaves
8) 1 tsp salt( as per taste)
9) 1 cinnamon stick
10) 4 cloves
11) 1/4 tsp Turmeric
12) 1 tsp degi mirch
13) 1/4 tsp roasted cumin seeds powder
14) 1 tsp red chilies powder
15) 1 tsp kitchen king masala
16) 1/4 tsp mango powder( Amchur)
17) 1 tsp garam masala powder
18) 1 tsp unsalted butter and
19) 6 cups water
Method of preparation:
Time to cook:45- 55 minutes, good for 6 person.
1) On Medium to high flame, pre-heat a cooker and put oil. When heated, change flame to low- medium and add onion, cloves and cinnamon stick.
2) Sauté for 5 minutes till onion change colour to golden brown
3) Add ginger/ garlic paste- sauté for 1 minute
4) In low/low to medium flame put tomato purée and salt, sauté 2 minutes till oil comes on top
5) Add rest of masalas in cooker( turmeric, red chilies powder, degi mirch, roasted cumin seeds powder, mango powder, garam masala powder and kitchen king masala- sauté for 1 minute.
6) Now put kidney beans , mix well and put 1 cup of water(out of total 6 cups), mix well and cook for 5 minutes with no lid
7) After 5 minutes, put rest of 5 cups of water , mix well and close the cooker, change flame to medium. Wait for 7-8 whistle (depending on cooker and quality of beans)
8) After 8 whistles when the pressure is released open the lid.
9) Mash 1-2 tspn of kidney beans and put it back in cooker to make gravy a little thick.
10) Put butter, green chilies and fresh chopped coriander leaves
11) On low flame cover with lid ( not to pressure cook)for 10 minutes- mix in between 2-3 times
12) Masala rajma is ready- garnish with fresh chopped coriander leaves.
