Ingredients:
1) Gobhi (500 gms) cut into medium size pieces,washed and rinsed
2) 2 Medium Potatoes, cut into medium sized cubes, washed and rinsed
3) 1 tsp Ginger Paste( or fresh ginger)
4) 2 Green Chilies, finally chopped
5) 4 tsp Cooking oil
6) 1 tsp Salt( as per taste)
7) 1 tsp Turmeric Powder (haldi)
8) 1 tsp Red Chilies
9) 1/2 tsp crushed Red chilies
10) 1 tsp Garam masala powder
11) 1 tsp Dry Coriander powder
12) Freshly chopped coriander leaves
13) 4-5 spoon Water ( in case of need)
Method for Preparation:
1) Pre- heat kadai on a low flame and pour oil- change flame to Medium.
2) Once oil is heated a little bit- put Potatoes (aloo)- sauté for 2 minutes
3) Once potatoes turn light golden brown – change flame to low and put ginger paste, mix well then add Gobhi- mix well
4) Change flame to medium, put salt – sauté for 2 minutes and cover kadai with lid until gobhi turn light golden brown
5) Add Turmeric powder, Red chilies powder- mix well. Now cover lid and let vegetables cook for 5 minutes on Low to medium flame.- stir in between.
6) Now put chopped Green chilies, dry Coriander powder and crushed red chilies and some fresh coriander ( except Garam masala)- mix well and cover with lid and cook for 10 minutes on low heat( stir in between)
7) After 10 minutes, add Garam masala and sprinkle 2 tsp spoon water , mix and cover with lid to cook for another 5 minutes.
8) After 5 minutes check if Gobhi and Aloo are soft ( done) ( if not then sprinkle 2 tsp spoon water and mix and cook for another 4-5 minutes)
9) once Gobhi / Aloo are cooked , garnish with fresh coriander leaves and serve to eat.
10) Eat with Roti, Parantha or puri.
Note: please stir in between in method 7 and 8.
