Yummy Egg Plant | Baingan ka Bhartha

Yummy Eggplant Bharta( Baingan): Ingredients:
1) medium eggplants -2
2) medium onion thinly chopped -2
3) tomatoes , freshly chopped ( red tomatoes preferred)-2
4) Degi mirch powder- 1 tspn.
5) ginger chopped- small amount
6) dry whole red chili-1
7) freshly chopped green chilies-3 ( optional)
8) garam masala powder- 1/4 tspn.
9) salt -1 tspn. (As per taste)
10) red chilies powder-1/2 tspn.
11) cooking oil- 2 tbs
12) freshly chopped coriander leaves- small amount.
Preparation Method:
1) To Roast the Eggplants ( baingan) in Air fryer ( you can roast in gas stove top or in oven) 1) wash and dry eggplants and give them small cuts ( with knife or poke with fork) all over and put any cooking oil all over the eggplants with a brush
2) put a aluminum foil on the base of air fryer pan and put both the eggplants in and insert the pan in air fryer
3) press Roast key ON – at 390 degree Centigrade heat for 10 minutes
4) change ( reverse) eggplants upside down ( so that they roast on other side also) and again roast for 10 minutes more
5) so, after total 20 minutes of roast ( depending on the power of your fryer) – take the eggplants out in a plate and let them cool a bit
6) peel off the skin with the help of a fork or by your fingers
7) cut the head of eggplants and mash the roasted eggplants with a fork.
Now , we will cook the roasted eggplants in a pan to make yummy bharta.
1) on a pre – heated pan ( or kadai) , put oil and after a minute put whole red chili, ginger and onion( flame ? in medium)
2) sauté for 5 minutes, on LOW flame , till onion turn golden brown
3) On medium ? put tomatoes, salt and sauté for 5 minutes with lid covered – till oil oozes out ( stir occasionally)
4) now put degi mirch powder, red chilies powder, green chilies and green coriander leaves- mix well for 1 minute
5) flame ? on low put roasted and mashed eggplants ? and mix well
6) cover with lid and let dish cook for 10 minutes ( stir occasionally)
7) now , add garam masala , mix well for a minute on medium ?
8) now eggplant ( baingan) bharta is ready
9) you can eat with roti , naan or parantha.
